Prepare Fries
Heat the oil in a large baking tray until hot and place the prepared sweet potato strips into the tray, coating them well with seasoning.
Roast
Add fresh rosemary and roast in a moderate hot oven at 190°C / Gas Mark 5 for 30 minutes or until crispy.
Finish & Serve
Remove from the oven and drizzle generously with toasted sesame oil before serving.
