Cook Leeks
Melt the butter in a large saucepan and fry the leeks and spring onions for 8–10 minutes until softened.
Add Mirin
Add the Japanese mirin rice wine and reduce until fully combined with the leeks and onions.
Simmer Soup
Pour in the vegetable stock water, add potatoes and seasoning, then simmer for 10–15 minutes until the potatoes are tender.
Serve Hot
Garnish with snipped chives and coriander leaves before serving piping hot.
Serving Suggestions
Serve with warm crusty buttered bread for a comforting and hearty meal.
Garlic croutons or crispy bacon bits can also be added for extra flavour and texture.
