Instructions
Cook Vegetables
In a medium-sized saucepan, cook the vegetables and diced onion until softened.
Add Seasonings
Add turmeric, red pepper powder and miso paste to the saucepan, then pour in the stock water and season with black pepper.
Simmer Soup
Bring the soup to the boil and simmer on medium heat for 20 minutes until the vegetables are tender.
Blend & Serve
Blend all the ingredients until smooth and lump-free. Serve piping hot.
Serving Suggestions
Best served piping hot with a generous sprinkle of fresh chives.
Pair with crusty buttered granary bread or wholemeal brown bread for a comforting meal.
