Blend the salmon steaks, potatoes, herbs, chillies, lemongrass, lime zest and juice, Dijon mustard, garlic, ginger, eggs, sea salt and black pepper into a thick lump-free paste.

Shape Patties

Using clean dry hands, shape the mixture into medium sized round patties.

Coat Patties

Dip each patty into beaten eggs and coat generously with panko breadcrumbs on all sides.

Fry Salmon Cakes

Heat oil in a frying pan and shallow fry the patties in batches until golden brown and crispy on all sides.

Drain & Serve

Place the fried patties onto disposable paper towels to absorb excess oil before serving.
